Stuffed Zucchini

Stuffed Zucchini

Makes 4 servings

Ingredients

  • 4 round zucchini
  • 500g (17.636oz) minced meat (chicken, beef, pork)
  • 1 onion
  • 2 cloves of garlic
  • 1 tomato chopped
  • 30g tomato pulp
  • 50g white wine
  • salt, pepper, oregano
  • 50g olive oil
  • Light mozzarella cheese

Traditional Preparation

Preheat the oven to 180ºC/350ºF/gas 4.
Cut the top of the zucchini and scoop out flesh, leaving 1/4" thick.. Reserve the inside of the Zucchini. Place the zucchini in a microwave steam recipiente and cook it.
Chop the onions and garlic, put in a casserole-type , along wit the olive oil cook for some minutes. Add the minced meat, the tomato, the tomate pulp, the inside of one zucchini, wine, spices and let cook for about 20 minutes.
When cooking is complete, fill the zucchini with the cooked meat. Tear over the mozzarella. Cook in the preheated oven for 30–35 minutes until golden.

Thermomix Preparation

Preheat the oven to 180ºC/350ºF/gas 4.
Cut the top of the zucchini and remove some of the inside. Reserve the inside of the Zucchini. Place the zucchini face down in the Varoma.
Place the onions, garlic and the inside of one zucchini In TMX bowl a chop 5seg on speed 5. Scrape down add olive oil, cook 5min/100º/speed 1.
Add minced meat, the, the tomato, the tomate pulp, the white wine, spices. Put the varoma with the zucchinis and let cook 20min/varoma/ /Speed1.
When it´s finished, fill the zucchini with the cooked meat. Tear over the mozzarella. Cook in the preheated oven for 30–35 minutes until golden.
