Mexican Style

Makes 2 servings


  • 1 Onion
  • 1 tbsp fresh grated ginger
  • Olive Oil
  • 250g (8,81 oz) Beef mince
  • 1 chopped tomato
  • Taco seasoninng
  • 285g (10oz) Frozen Spinach (defrost)
  • ShreddedCheese


Put a wook on a medium heat, add a splash of olive oil then cook onion (chopped) and ginger for about 5 minutes, stirring now and then, until soft.

Add the mince and break apart any lumps with a wooden spoon. Let it cook for a couple of minutes until starting to brown. Add chopped tomato and taco seasoning.

Cover with a lid then let cook for 10 minutes. Add Spinaches and cook 10 minutes. Top with shreddesd cheese.
